
REFLECTION
I am beyond excited to complete this project and host this event. When I was attending Snow College to obtain my associate’s degree, I had the opportunity to become involved with the service learning department on campus. There were several opportunities that I was able to join in on, and after a year, I started working directly with the Service Learning Director, English Brooks. He hired me on as his Service Learning Assistant, and I helped him with the projects and events he was working on during the year. We had a semester-long film screening about Food and Hunger, and campus joined in while we watched films, ate different foods, and discussed the culture of food and the reality of hunger. Our big project for the year was to host an Oxfam America Hunger Banquet. Oxfam International is a foundation that works to decrease poverty in the world. They have created a template for an experiential dinner that shows attendees a taste of the reality of what world hunger is like.
This project is so close to my heart. I had such a powerful experience when I participated a couple years ago at the event at Snow College, and I can not think of a better way to finish my senior year and bachelor’s degree than to bring such an experience to the SUU campus. This would be my way of wrapping up my great experience and sending out a thank you to the Cedar City community and SUU campus for all the support they offer to students, because the support definitely reached me. And I want to pay it forward in the best way I know how.
